Normally I'm not a huge fan of quiche. I'm not a huge fan of eggs to begin with, and most quiches taste like eggs. So I was pleasantly surprised upon trying my friend Andrea's recipe, which is a bit of a "whatever veggies you happen to have in the fridge" sort, how much I liked her version of this breakfast dish.
My attempt didn't taste quite the same as hers, and I think it may have been due to the cheese (hers was a lot spicier than what I procured).
Anyway, it's really easy, and here's how you do it. Remember, you can really put any veggies in that you like - red peppers would be another great addition, you could use kale instead of spinach, maybe kick the whole thing up with a few dashes of Tabasco.

Spinach & Feta Stuffed Chicken
You know how sometimes you have stuff sort of sitting in your fridge because you bought it on sale, or for a different recipe, and now you're just not sure what to do with it? I had that happen a few months ago with baby spinach and crumbled feta cheese.
A couple of Google searches later, I came across a recipe from Food.com for an easy spinach and feta stuffed chicken breast, and thought I'd give it a whirl, and my own small twists.

Sauteed Baby Spinach with Garlic and Blue Cheese
There are times when I have leftover ingredients and need to play around in the kitchen to use them up. A while back, I had about half a bag of baby spinach and perhaps half a cup of crumbled blue cheese, and this is what I came up with.
It's very quick to throw together, and the amounts are adjustable depending on how many people you're serving. Here's how I made it for two people.

Bleu Cheese Alfredo with Chicken and Spinach
A few years ago, I developed an alfredo sauce recipe from a couple recipes I found in books and online, and last weekend I decided to give it a go, with a little twist.
A bleu cheese twist.
It was incredibly quick to prepare, and I decided to mix in some cooked chicken and baby spinach to give it some extra nutrition, and to use up some chicken I'd cooked the day before.
The result was beautiful, and my husband, who isn't particularly a fan of alfredo, loved it.
